Wilbur’s Signature Oatmeal

Kids will fight for seconds when they eat this…

Ingredients

  • 1/2 tablespoon unsalted butter

  • 1 apple, about 1 1/2 cups diced (canned apples are great too)

  • 3 tablespoons sweetener (maple syrup, honey, or brown sugar)

  • 1 teaspoon cinnamon

  • 1/4 teaspoon ground nutmeg

  • 1/2 teaspoon salt (or maybe more depending on taste)

  • 2 cups water

  • 1 cup oats

  • 1/2 cup chopped walnuts or pecans (optional)

  • 1/2 cup cow’s milk or almond milk

  • Whipping Cream on top

Instructions

  1. In a medium saucepan, melt the butter over medium high heat. Add 1 cup of the apples, sweetener, and sprinkle in the spices and salt. Cook for 2-3 minutes until the apples are softened, unless you are using canned apples, you don’t have to cook them.

  2. Pour in the water, turn the heat up to high, and bring to a low boil. Add the oats and reduce the heat to medium/medium high. Cook, stirring occasionally for 3-5 more minutes.

  3. Add the walnuts (if using), and continue cooking until most of the liquid is absorbed. Divide the oatmeal between two bowls, sprinkle each with the remaining apples, drizzle with a little more sweetener, add milk, and most importantly, a nice dollop of whipping cream on top! Wilbur will be proud!
